The Grading Standard
A plain walkthrough of what's actually on a Lumina certificate — the six axes we measure, why each one matters to a buyer, and the quality-protection model we borrowed to build it.
The Problem
Walk through any specialty grocer's tea aisle and you'll find "ceremonial grade" on tins that range from genuinely first-harvest, stone-milled Japanese matcha to blended culinary-grade powder grown thousands of miles from Uji or Nishio. The term isn't regulated. No independent body verifies it before it goes on a label — a supplier can call a lot "ceremonial" for the same reason a listing can call a hotel room "luxury": because nothing stops them.
That ambiguity was tolerable when matcha was a niche category. It's a real cost now. As production outside Japan accelerates and global demand pulls in buyers who've never tasted a true first-harvest lot, the gap between the label and the leaf gets wider — and the premium that generations of Japanese growers built into the word "matcha" starts eroding for everyone, including the growers doing it right.
A grade only means something if it's independently verifiable, consistently applied, and separated from claims about where the product came from. That's the standard we hold every Lumina lot to, and it's the reason we publish the underlying lab numbers instead of a marketing tier.
The Precedent
Japan has already solved a version of this exact problem — for beef, not tea.
Every carcass sold through Japan's beef distribution system is evaluated by an accredited, independent grader against fixed, published criteria — not by the seller's own judgment. The grade travels with the product on a certificate, alongside a traceability number.
That grade measures quality alone — marbling, color, texture, fat quality. It says nothing about where the animal was raised. Provenance (which prefecture, which farm, which bloodline) is documented and verified as a completely separate claim, so a high grade can never be used to imply an origin that isn't independently confirmed.
That separation is what let "wagyu" keep meaning something as the category went global and other countries began raising wagyu-lineage cattle abroad. A high grade travels; a Japanese provenance claim has to be earned and verified on its own. Matcha has neither piece of that system today — which is exactly the gap Lumina's certificate is built to close.
The Six Axes
Every Lumina lot is measured per 3g serving by an independent laboratory before it leaves Japan, across six axes — four chemical, two sensory.
A proxy for overall amino-acid and umami potential. Total nitrogen rises the longer a tea plant is shaded before harvest, which is why it's one of the clearest chemical signals of how a lot was grown, not just how it was processed.
Responsible for the savory depth and roundness ("kokumi") that separates a well-shaded first harvest from a thinner, later-picked lot. Higher free amino acid content generally tracks with more careful shading and earlier picking.
The specific amino acid behind matcha's characteristic savory sweetness. It also smooths out bitterness from catechins, which is why high-L-theanine lots taste rounder even before sweetener is added — a key factor for usucha-style preparation.
Polyphenols responsible for bitterness, astringency, and much of matcha's antioxidant profile. Catechin levels rise with sun exposure, so a lower catechin reading generally signals more shading — while a higher reading can be exactly right for a latte-grade lot built to stand up to milk.
A trained sensory score capturing freshness and character — the vegetal, marine, and grassy notes ("kaori") that fade quickly once a lot is oxidized or poorly stored. Aroma is one of the fastest indicators of how well a lot has been handled after milling.
An overall sensory panel score for balance — how umami, sweetness, and bitterness resolve together in the cup, along with mouthfeel from particle fineness. This is the axis that most directly answers "how does it actually taste."
Three Separate Claims
This is the part most buyers have never had explained to them — and it's the part that actually protects a premium as a category globalizes.
Provenance is verified independently of chemistry — field, region, and grower are documented and confirmed on their own, the same way a wagyu certificate verifies bloodline and farm separately from the marbling score. A matcha grown outside Japan can, in principle, score well chemically; that's exactly why origin has to be its own line item rather than an assumption baked into the grade.
Total nitrogen, free amino acids, L-theanine, and catechins are measured per 3g serving against an independent lab's equipment and methodology — not a supplier's internal tasting panel. This is the part of the certificate that answers "how good is it," stripped of marketing language.
A grade built for espresso-milk drinks reads differently from one built for usucha, and conflating the two is one of the most common ways buyers overpay for chemistry their menu doesn't use. Lumina scores lots for the use case they're actually being bought for, so a café buying for lattes isn't paying a ceremonial-grade premium for L-theanine it's masking with milk.
